Jumborth
Jumborth is a cherished recipe in my family that has been passed down through generations. This delightful dish resembles an Italian stew, crafted with an assortment of fresh garden vegetables, savory dried sausage, and wholesome eggs. Its unique combination of ingredients creates a hearty meal that’s perfect for both special occasions and everyday dinners. In this post, I will guide you through the step-by-step recipe to make Jumboth, ensuring you can recreate this warm dish that has long been a family favorite.
Ingredients Needed
To make Jumborth, you'll need the following ingredients:
1 onion, diced or bunch or rareripes
2 tablespoons olive oil
1-2 sticks pepperoni, skinned and cut into quarters
Peel and cube 6-8 red potatoes
2-3 large tomatoes, diced (I sometimes use canned with the juice)
2 summer squash, sliced
2 zucchini, sliced
1-2 cup green beans, peas, or suggersnaps.
Salt to taste
Italian seasoning to taste
8-12 eggs
With these ingredients, you will create a fulfilling and satisfying dish that bursts with flavor.
Step-by-Step Recipe for Jumboth
1. Start by heating the olive oil in a large pot over medium heat. Add the diced onions and sauté until they become translucent.
2. Next, stir in the quartered pepperoni and sauté together with the onions for a few minutes until the mixture becomes fragrant.
3. Add the diced red potatoes to the pot, stirring to combine everything well. Then, introduce the diced tomatoes, covering the mixture with a few inches of water.
4. Bring the pot to a rolling boil, then reduce the heat to let it simmer.
5. After about 10 minutes of simmering, add the sliced summer squash and zucchini. Allow everything to continue cooking until the vegetables are tender.
6. Now it’s time to add the green beans. Simmer everything until they reach your desired level of doneness.
7. Season the dish with salt and Italian seasoning to taste, ensuring the flavors meld together beautifully.
8. To finish, crack the eggs onto the surface of the stew, cover the pot, and cook until the eggs have set.
I do simmer awhile as I like my soup vegetables soft. I always enjoy soups and stews the next day as the flavors seem to come out more the next day.
Serving Suggestions
Once your Jumborth is cooked, serve it hot in bowls, alongside crusty bread for dipping. This dish not only nourishes the body but also warms the heart, reminding us of family gatherings and shared meals.
Whether you’re preparing Jumborth for a satisfying weeknight dinner or a festive family gathering, its flavorful ingredients and comforting essence will surely be a hit.
I hope you enjoy,
